Spring time: Start your day with a healthy and delicious breakfast!

After a busy first quarter, a bad fall from my bike and the first doses of Covid vaccine last week, here I am! Spring has finally arrived, it’s a beautiful sunny day and this morning I’ve spoilt myself with a lovely and healthy breakfast! Just what I needed to start my day.😊

Ingredients

Serves 1

  • A medium size pear (preferably bio)
  • Smooth organic peanut butter
  • Plain yogurt (I’ve used soya yogurt)
  • Mixed seeds of your choice 

Preparation

Wash and dry your pear.

Cut the pear lengthwise in thick slices (about 6), leaving the skin on. 

Spread each slice with peanut butter, sprinkle some seeds and add a spoonful of yogurt.

Alternatively start with the peanut butter, then the yogurt and then finish with the seeds on top. See which one you like best!

To prepare my breakfast, I’ve used organic cold milled flaxseeds, sunflower, sesame and pumpkin seeds but you can use the ones you prefer. I also quite like the Linwoods cold milled organic flaxseed, sunflower, pumpkin and chia seeds & goji berries mixture.  

Being lactose intolerant I’ve opted for plain soya yogurt but you can use dairy plain yogurt if you prefer. 

I’ve tried this recipe using apples as an alternative to pears but they didn’t quite work for me. 

Pears are not just delicious with this recipe but they are also good for your gut! The skin is the part most rich of fibre. That’s why, to maximise the benefits, it’s better to eat them with the skin on (if possible).

Nutritional benefits

Pears contain vitamins (C, K), minerals (copper and potassium) and fibre, which feeds the healthy bacteria in your gut, and promotes bowel regularity. They’re also a source of polyphenol antioxidants and flavonoids.
